Tuna Rice Salad Bowl Recipe
A recipe created by the one and only Alvaro Velasco (my girlfriend’s dad). I love how delicious it is for such a convenient, nutritionally complete and simple meal. You can use rice, quinoa or couscous as your chosen carb source and any left over veg in the fridge.
Here’s what I used in my most recent tuna rice salad bowl
- Red onion
- Carrot
- Spinach
- Beetroot
- Sauerkraut
- Chickpeas
- Broccoli sprouts
- Avocado
- Basmati rice
2 x cans of tuna (Ortiz – Bonito Del Norte aka the best tuna ever)
This is a great recipe for people following both vegetarian and vegan diets too as you can just remove the tuna and use chickpeas as your protein source.
